If you are looking to see the last time a user logged into their email you can do this in the Exchange management console, recipient configuration, open the properties of the mail box in question, and the first tab, "General", will show the statistics of the mailbox including last logon user and modified date.

The log files have connection information for the various clients. It is of not much interest unless you have issues with clients connecting to the mailbox. The settings for logging can be changed by editing the Microsoft.Exchange.RPCClientAccess.Service.Exe.Config file in the Bin directory.
